Noodles are an essential ingredient and staple in Chinese cuisine. Although the Chinese, Arabs, and Italians have all claimed to have been the first to create noodles, the first written account of noodles dates from the Chinese East Han Dynasty, between AD 25 and 220. During the Chinese Song Dynasty (960–1279) noodle shops were very popular in the cities, and remained open all night. In October 2005, the oldest noodles yet discovered were found in Qinghai, China, at the Lajia archaeological site, during excavation of a Neolithic Qijia culture settlement along the Yellow River. The 4,000-year-old noodles appear to have been made from foxtail millet and broomcorn millet. Today, millet is not a commonly used ingredient in Chinese noodles.

Chinese noodles are generally made from either wheat flour, rice flour, or mung bean starch, with wheat noodles being more commonly produced and consumed in northern China and rice noodles being more typical of southern China. Egg, lye, and cereal may also be added to noodles made from wheat flour in order to give the noodles a different colour or flavor. Arrowroot or tapioca starch are sometimes added to the flour mixture in low quantities to change the texture and tenderness of the noodles' strands. The dough for noodles made from wheat flour is typically made from wheat flour, salt, and water, with the addition of eggs or lye depending on the desired texture and taste of the noodles. Rice- or other starch-based noodles are typically made with only the starch or rice flour and water. Noodles may be cooked from either their fresh (moist) or dry forms. They are generally boiled, although they may also be deep-fried in oil until crispy. Boiled noodles may then be stir fried, served with sauce or other accompaniments, or served in soup, often with meat and other ingredients. Certain rice-noodles are made directly from steaming the raw rice slurry and are only consumed fresh. Unlike many Western noodles and pastas, Chinese noodles made from wheat flour are usually made from salted dough and therefore do not require the addition of salt to the liquid in which they are boiled. Chinese noodles also cook very quickly, generally requiring less than 5 minutes to become al dente and some taking less than a minute to finish cooking, with thinner noodles requiring less time to cook. 炸酱面

材料：

半肥瘦肉末500克、鸿方缘的甜面酱，、清水150毫升、香葱1根、老抽1勺、绿豆芽200克、黄瓜1根、面条适量、大蒜适量、醋适量

作法：

1、把老抽和黄酱倒入一个大碗内，然后加入150毫升清水用筷子慢慢调匀；京葱切成碎末备用

2、炒锅内倒入比炒菜更多的油烧热，油热后放入京葱末翻炒半分钟后倒入肉末一起翻炒至变色脱生，然后倒入调匀的黄酱用最小火慢慢翻炒78分钟即可

3、把洗净的绿豆芽放入沸水中焯烫一下马上捞出；黄瓜洗净后切成丝；大蒜剁成蒜末备用

4、把烫过绿豆芽的水烧开后放入面条煮熟，然后捞出面条浸入冷开水后捞起盛入碗内

5、最后把绿豆芽和黄瓜丝夹到面条上再盛入1勺炒好的炸酱大蒜末，再倒少许醋拌匀即可

炝锅茄子面

材料：

茄子1个，青椒1／2个，拉面1束（约120克） 香葱一根

做法：

1、茄子洗净，切成条，青椒去籽，洗净，切丁，素肉泡软，切碎。

2、烧热半杯油，放入香葱编出香味然后放入将茄子青椒周炒。

3、加水烧开，放入面条煮熟捞出，放入面碗中。

打卤面

材料：

黄花，木耳，香菇，大葱，鸡蛋

做法：

1、香菇木耳黄花泡发；

2、锅底放油下肉馅炒熟加入葱花香菇，加酱油料酒糖盐，再加木耳黄花鸡精，加适量水同煮；

3、淋入打散的蛋液，勾芡撒葱花蒜末。

红烧牛肉面

材料：

牛肉500克，面条500克，小白菜250克，水10杯，葱4根，姜2片，大蒜8粒，八角4粒，辣椒1根；酱油1杯、水6杯、酒1汤匙、辣豆瓣酱1大匙，麻油少许。 做法：

1、牛肉洗净切块，氽烫去血水。

3、水烧开，煮熟面条捞出，再烫熟小白菜。

鸡丝凉面

材料：

白斩鸡数块、面条、黄瓜、芝麻酱、麻油、糖各1大匙、酱油2大匙、辣椒粉适量 做法：

1、面条煮熟，捞出，放入冷水中冲凉，平铺在餐盘中；

2、白斩鸡切丝，黄瓜洗净、切丝，均放在煮好的面条上；

3、芝麻酱放入碗中加入麻油搅匀，再加入酱油、糖及2大匙冷开水稀释，淋在鸡丝凉面上即可。

麻酱面

材料：

切面150克， 麻酱一大匙，葱花一中匙，精盐半小匙，味精半小匙，熟色拉油一中匙，沸水500克。

做法：

1、取一汤碗，倒入沸水，将切面投入，高火5分钟；

虾仁丸子汤面

主料：

黄瓜 1/4根、虾仁 4只、肉馅 1勺、姜 1片、荞麦面 25克。

辅料：

盐、淀粉。

作法：
