前 言
2008年北京奥运会不仅是世界性的体育盛会,也是向世界展示中国文化和首都形象的重要契机。餐饮服务在奥运会的整体运行中占有重要位置,北京作为中国的首都,荟萃了中华几千年的饮食精华,保证餐饮服务质量,满足服务需求,是实现“有特色、高水平”北京奥运会、残奥会目标的基础之一。菜单作为餐饮行业展示对外形象和中华饮食文化的窗口,是服务人员与顾客交流沟通的桥梁,规范中文菜单英文译法具有十分重要的意义。为此,北京市相关部门编制了《中文菜单英文译法》一书。
《中文菜单英文译法》不仅是餐饮行业语言交流的工具,也是传播中华饮食文化让世界了解中国的载体,是加深中外人民友谊的桥梁与纽带。这本书在为迎接奥运嘉宾提供帮助的同时,也将对北京市中文菜单使用统一规范的英文译法起到指导作用。

七、 介詞in和with在湯汁、配料中的用法
1、 如主料是浸在湯汁或配料中時,使用in連接。

2、 如湯汁或蘸料和主料是分開的,或是後澆在主菜上的,則用with連接。 如:海鮮烏冬湯面 Japanese Noodle Soup with Seafood
八、 酒類的譯法原則
進口酒類的英文名稱仍使用其原英文譯法,國產酒類以其注冊的英文為准,如酒類本身沒有英文名稱的則使用其中文名稱的漢語拼音。
