篇四:Tomahwak

斧頭牛排劈飽

牛牛置牛排骨佢之肉為小!長扑士最過癮之處,在於不同部位、不同切法,皆有不同的食味享受,就以「Rib」肋骨例,可切出Rib Eye(肉眼)、Prime Rib排),甚至狀如斧頭的「Tomahwak Cut」這個「斧頭排」雖然未至於能夠破柴,但30厘米、肉身更重達1公斤,真係分分鐘濕!

慢煮再煎香 裏外味道不一樣

Tomahwak Cut最先於澳洲興起,由於分量太大,要兩、三人才能吃得下一份,在香港比較罕見,最近香港W酒店總廚便將之引入餐廳Fire,由即日起供應至今月尾。牛排放入真空袋,置於攝氏65度熱水慢煮後,再拿出來煎香表面,由於厚度相當,故此不同位置便有不同質感,邊緣位置較薄,入口較香脆,而中間位置夠厚身,能嘗到內裏豐腴的肉汁。餐廳更供應穀飼乳牛及4級雪花神戶牛柳兩種Tomahwak Cut牛肉,前者肉身較Dry肉味更濃,後者味道較清但較Juicy。

連骨牛排 狀似斧頭

「Tomahwak」是印第安語,意即斧頭,是牛肋骨部位一種特定切法。酒店大廚稱,Tomahwak Cut對牛隻年紀、所用之飼料及牛排尺寸皆有嚴格標準,一般來說,約6個月大的小牛戒奶後,以

Tomahwak穀料餵飼70天後宰割,於肋骨位切出長約30厘米的骨頭,及重約1公斤之連骨肉,由於形狀像斧頭,於是稱之為「Tomahwak」。而大廚表示,一頭牛最多只能切出9~10件Tomahwak 牛排,尾段肋骨亦因太短而且肉不夠大件,而不能切成斧頭狀。

? 澳洲早於10多年前,已引入日本牛種,成功繁殖了澳洲和牛。其大理紋油花入口融化,綻放甘香食味,加上低於日本牛肉的價格,大受食家歡迎。有研究指出,和牛比一般牛含更多單一不飽和脂肪、omega 3和omega 6,令澳洲和牛聲價更高。

跟日本和牛一樣,澳洲和牛也有分級。然而選擇時除了往級別看,更要了解和牛的血統,追尋食味的根據。 評級複雜 容易混淆 和牛分級大家或許略知一二,常聽說「M9」、「A3」等,其實都是針對和油花分多寡和均勻程度而訂出。 日本的評級由A1至A5,A5屬頂級﹔澳洲評級則由M1至M9,基本上M8、M9已達日本的A5極級,但亦有澳洲公司私下訂出高於M9的級別,達至M12,然而產量並不多。 評級複雜,連一般本地廚師對和牛的認識也流於表面,大眾自然就更加陌生了。 然而,當聽聞酒店推出和牛自助餐,不少人都食指大動,但付費之後,閣下可知眼前和牛質素如何﹖ 本地食品進口商鮮運食品有限公司總監鄺大華指出,「最普遍誤導公眾的手法是把『澳洲和牛』省略地稱為『和牛』」,其實兩者在食味和飼養過程都有分別。 凡日本出產的牛都叫和牛,但至今仍未解禁,如果有餐廳標榜出售日本和牛,例如正宗神戶牛柳、米澤牛肉等,那很可能是走私入境,食客可要小心了。 肉眼評級 準繩未夠 鄺大華續稱﹕「澳洲和牛的飼養方法較天然健康,牛隻在15個月前餵飼母乳和草,15個月大才開始餵食穀物,長至600日便會屠宰出售。」 澳洲和牛的評級工作由該國政府獨立人員鑑別,方法是在牛隻的脊背切開一道缺口,憑肉眼比對照片,從而判別油花分布的旺盛均勻而進行分級。 「要知道牛的肉質在不同部位是有所出入的,即使同在脊背位置,前後總有參差。單憑肉眼從單一部位去鑑評,可以想像,評級未必能完全反映整體的質素」。故此,想追求極品質素,可進一步從和牛的血統着手。 分明血統 了解質素 在澳洲和牛主要分成兩個不同品種﹕

Fullblood和Purebred。Fullblood即純種日本黑和牛,沒有混入任何其他牛的血統﹔Purebred則是和牛跟安格斯牛的混種,食味兼有安格斯牛的濃香和嚼感,本地多數餐廳供應的澳洲和牛,多屬此品種。

Purebred品種近年又配出分支Holstein,把和牛跟另一種牛配種,牛隻長肉快、油花多,但缺點是水分較多,背脊位形態欠缺美感,橫切出來的牛柳呈下陷,影響賣相。 不斷純化 味道日佳 第一隻澳洲和牛的出現,是從日本引進雌性活牛,配以日本雄牛的精子,以人工交配方式誕生。小

牛長大後,再與澳洲不同品種的牛隻交配,例如與安格斯牛或Holstein牛配成的第1代混種牛,業內會給予F1級別。F1牛種則再跟純種和牛配種成F2,換言之混種牛的血統其實不斷在純化,至今已發展至F4級別,亦即含日本和牛成分最高的品種,故可以說Purebred和牛的質素正逐步提升。 如今日本和牛不但登陸了澳洲,更在添加了澳洲水土文化氣質後回銷日本。澳洲人素來講究人道畜牧,不會使用終生禁錮的方式來催谷和牛生長脂肪,牛隻在有限度的自由環境下成長,感覺稍為健康。 ? 日本和牛-简介 日本和牛以黑色为主毛色,在乳房和腹壁有白斑。成年母牛体重约620千克、公牛约950千克,犊牛经27月龄育肥,体重达700千克以上,平均日增重1.2千克以上。日本和牛是当今世界公认的品质最优秀的良种肉牛,其肉大理石花纹明显,又称"雪花肉"。由于日本和牛的肉多汁细嫩、肌肉脂肪中饱和脂肪酸含量很低,风味独特,肉用价值极高,在日本被视为"国宝",在西欧市场也极其昂贵。

日本和牛是世界上公认的优秀肉牛品种,利用该品种所生产的牛肉品质也是独一无二的,其特点为:质地柔软、细嫩多汁,具有浓厚的牛肉风味,牛肉外观表现出具有极强的大理石花纹,呈多星状像雪花一样均匀有致的分布在牛肉中,鲜嫩可口,称得上是牛肉产品中的极品。

真正的日本和牛是用啤酒、牛奶喂养至大,有专人替它们做按摩,每天听着古典音乐在散步,于是,对于日本和牛,禁不住就产生了向往之感,即使是一道价值千多元的铁板和牛西冷,愿意排

队的等候者亦大有人在。举凡看到有关和牛的消息,均有识食之人闻风而至,足见牛牛的魅力无法可挡!

日本和牛-饲养饲料

1、稻草必须采用科学的方法经过严格的加工处理,在饲养过程中根据肉牛生长需要,分阶段饲喂,并要严格掌握综合能量配置和饲喂量,否则达不到预期目的反而会给饲养中的育肥牛造成伤害或影响到经济效益的提高,这是根据生产目的和多年的试验结果,通过观察肉牛不同发育和生长阶段的需要而人为设定的。

2、饲养和育肥中如何合理使用稻草防止酸中毒显得非常重要。优质肉牛通常是用大量的谷物作为主要能量饲料,由此而产生谷物中微生物的发酵速度过快或数量消耗过多,而导致瘤胃酸中毒(尤其是集约化、规模化饲养条件下),主要原因是牛在短期内消化过量的谷物(淀粉)或糖导致牛胃有机酸和内毒素产生和吸收过快的“一系列的应激综合反应”症,酸中毒并不仅仅局限于某一单一病症,诸如瘤胃内PH。酸中毒不仅是一种营养失调,而是多方面积累的效果,比如瘤胃内PH值下降,内壁被损坏,肠道红肿发炎,脑部神经受损等综合症状。实践中亚急性酸中毒转为急性酸中毒时瘤胃的实际PH值是很难测定的,因此急性酸中毒在很多情况下是无法治疗的,或很快死亡,或动物消化道已遭受到不可逆转的损害,无可挽救。因此一定要在特定的阶段和条件下安全、合理的饲喂稻草才可以防止以上各种情况的发生。
