The History of the Potato Chips

1853, Saratoga Springs, New York

As a world food, potatoes are second in human consumption only to rice. And as thin, salted, crisp chips, they are America's favorite snack food. Potato chips originated in New England as one man's variation on the French-fried potato, and their production was the result not of a sudden stroke of culinary invention but of a fit of pique.

In the summer of 1853, American Indian George Crum was employed as a chef at an elegant resort in Saratoga Springs, New York. On Moon Lake Lodge's restaurant menu were French-fried potatoes, prepared by Crum in the standard, thick-cut French style that was popularized in France in the 1700s and enjoyed by Thomas Jefferson as ambassador to that country. Ever since Jefferson brought the recipe to America and served French fries to guests at Monticello, the dish was popular and serious dinner fare.

At Moon Lake Lodge, one dinner guest found chef Crum's French fries too thick for his liking and rejected the order. Crum cut and fried a thinner batch, but these, too, met with disapproval. Exasperated, Crum decided to rile the guest by producing French fries too thin and crisp to skewer with a fork.

The plan backfired. The guest was ecstatic over the browned, paper-thin potatoes, and other diners requested Crum's potato chips, which began to appear on the menu as Saratoga Chips, a house specialty. Soon they were packaged and sold, first locally, then throughout the New England area. Crum eventually opened his own restaurant, featuring chips. At that time, potatoes were tediously peeled and sliced by hand. It was the invention of the mechanical potato peeler in the 1920s that paved the way for potato chips to soar from a small specialty item to a top-selling snack food.

For several decades after their creation, potato chips were largely a Northern dinner dish. In the 1920s, Herman Lay, a traveling salesman in the South, helped popularize the food from Atlanta to Tennessee. Lay peddled potato chips to Southern grocers out of the

trunk of his car, building a business and a name that would become synonymous with the thin, salty snack. Lay's potato chips became the first successfully marketed national brand, and in 1961 Herman Lay, to increase his line of goods, merged his company with Frito, the Dallas-based producer of such snack foods as Fritos Corn Chips.

Americans today consume more potato chips (and Fritos and French fries) than any other people in the world; a reversal from colonial times, when New Englanders consigned potatoes largely to pigs as fodder and believed that eating the tubers shortened a person's life—not because potatoes were fried in fat and doused with salt, today's heart and hypertension culprits, but because the spud, in its unadulterated form, supposedly contained an aphrodisiac which led to behavior that was thought to be life shortening. Potatoes of course contain no aphrodisiac, though potato chips are frequently consumed with passion and are touted by some to be as satisfying as sex.

At the bottom of this picture, we can see thick buildings nearly cover the narrow roads. The traffic was heavy in this crowd city, how could he go to work in time? He wore a pair of red and white trainers and wanted to run to his working location. There is no doubt that, this way would make the man late and be critized by the manager. At this moment, the man came up with a good idea. He found out a can of ‘Hot & Spicy’ Pringles patato chips. He opened the can and ate

a piece of patato chips —— What a hot & spicy thing it is ! The man exhaled a breath, it seemed that a hot fire spouted from his mouth. He pitched a colourful hot ballon but without taking any gas and energy source. Next in line he tied himself with the hot ballon. His left hand only held up a can of ‘Hot & Spicy’ Pringles patato chips to provide the whole motivation. He faced upward, everytime he ate a piece of ‘Hot & Spicy’ Pringles patato chips, a big and orange fire spouted from his mouth. Huge fire was heating the air in the hot ballon, the ballon swelling little by little. The hot gas from his mouth was enough to make him leave the ground and up to air step by step. Shortly after, the tall buildings in city became very small, which says the man had been very high. That is a cloudy day and the sky was quite grey, which make the colourful hot bollon showy. As a result, without bearing the traffic jell, the man finally went to work in time. This advertisement is full of creation. As it known to all, taste is one of feeling so we people have difficulty to use a flat picture to present it. While the advertisement’s designer turns to another angle to show this patato chips’ hot and spicy —— even the air that a person breath can make a huge hot bollon up to the air ! Which attracts us to try the amazing taste of ‘Hot & Spicy’ Pringles patato chips. As far as I am concerned, young people often like seeking for excting things, ‘Hot & Spicy’ Pringles patato chips may be a not bad choice, it makes your body feel hot and excites your tasting nerves —— extremely spicy. Last but not least, maybe you can spout a fire and fly to the air after eating it! You needn’t to worry about being late for school or work!

2. Tell me about a world problem that you are very concerned about.

What worries me most is the poverty. Though China has been

developing rapidly and has become the second-largest economy in the world, there are still many people who are struggling for looking foods the basic demand. I'm a girl who grown up in a poor rural family and I know the pangs of hunger. I want to never see anyone suffers from the same pain like me. I don't want to see helpless expression of

finding no foods. Therefore, I'm really concerned about poverty. I just hope common prosperous and world peace, rather than poverty.

3. If you could choose another college major, what would it be? What would you like to learn or improve?

If I could choose another college major, I would choose photography. As is known to all, girls who like beauty adore taking photos. Of course, including me. I want to record all beautiful and impressive things by taking photos so that I could recall back the wonderful memory when I

was old. But regrettably I don't own the ability to take photo well. So I would like to choose the photography major if I could choose another college major. I want to learn all the technique like the view of the camera, framing of a shot and so on that can take photos well.

My dream job is being a primary school teacher. The reason why I want to be a teacher is that teacher is a sacred profession in my mind. I would like to stay with them to keep my simple heart forever. Therefore I want to be a teacher. As for my personality, I have mild nature and common touch. I always be patient to children. My hometown LuZhou is a national historical and cultural city which is famous for its white liquor manufacturing. However, with the

development of industry, water pollution also gradually increased. The water became no longer clear. Looking at the turbid river, I do think some effective measures should be taken to protect the water from polluting. I suggest the government improve laws and strictly enforce laws. No matter who pollutes the river should be taken strictly punishment. No exception. The masses should also take the responsibility to protect water and report the industry who illegally discharges pollution. What's more, government should strengthen the publicity of protecting water resources.
