1.全瘦的排骨并不好吃,所以需准备带点点肥的排骨.将排骨剁成4厘米长的小节,洗净沥水,用厨房用纸吸去表面水分.
2.姜切片,大蒜切片,葱白斜切成厚片.
3.炒锅置大火上烧热,倒入油,烧至5成热(油锅微微冒出烟气)时,调中火下入排骨段,炸3分钟,用筷子逐个翻面,再炸2分钟,各面呈焦黄色时,排骨中的水分也大部分干了.
4.锅中加入盐、老抽、鸡精、姜片、蒜片,与排骨同炒,倒入没过排骨面的温水,大火烧开,改小火炖煮30分钟.
5.排骨入味香软时,加白砂糖、米醋、香葱粒,大火收浓汁即可.
小贴士:
1.也可根据喜好加一汤匙番茄酱,色泽更加红润.
