端午节快到了，我和妈妈、姐姐准备酿豆腐包，迎接此佳节的到来。这是我第一次酿豆腐包，心里别提有多兴奋、多期待。

我学着妈妈的样子，挽起袖子，准备好材料。有猪肉、葱花、虾仁、糯米、香菇、马蹄??我们首先把材料洗干净。再把猪肉剁成肉末，把葱花、虾仁、糯米、香菇、马蹄放在剁好的猪肉末里，搅拌并放入适当的调味料。

把豆腐包的材料准备好了，下一步就是酿豆腐包了。我照着妈妈教的步骤先挑了一个豆腐皮，把里面的芯挖空。再把之前准备好的肉馅塞到豆腐皮包里。就这样，一个豆腐包酿好了。我站起来，欣赏自己的杰作。只见我酿的豆腐包，露出了一个“小天窗”，这是什么意回事呢？哦！原来是我把封口的那一层豆腐皮撕掉了。豆腐包的馅露出来了，十分难看。我双手洒满了馅，连脸上都“挂”着小米粒。大人们瞧瞧我，又瞧瞧我酿的豆腐包，个个都笑弯了腰，我也只好跟着笑。

最后，我帮妈妈把酿好的生豆腐包，放在锅里蒸了30~40分钟左右，就大功告成啦！经过这次酿豆腐包，我懂得了一个道理：妈妈平时做家务活，看似很简单，其实也是不容易的呀！我以后要多帮妈妈做一些力所能及的家务。我吃着自己酿的香喷喷的豆腐包，心想：我能为爸爸妈妈分担家务了，我真棒。想着想着，我高兴地笑了。

东江酿豆腐

东江酿豆腐源于古时中原人包饺子的习气，因迁移到岭南无麦可包饺子，逢年过节，便想出了酿豆腐的吃法。因岭南有黄豆而少面，所以先人用制造过黄豆即是豆腐包饺子而得来。豆腐用煎、酿、煲等制法，原煲上桌，如火如荼，味香汁浓，小巧剔透，极具食相。

东江酿豆腐的制法精细，首先是选用嫩滑的东江山水豆腐，将豆腐切成小块。把猪肉、鱼肉、虾米细剁成肉泥，加上配料，搅拌成肉馅。接着取每块豆腐在中间挖一小洞，置入肉馅。最后用中火烧热炒镬，把酿豆腐煎至两面金黄色取出，放入砂煲，再次参加上汤、配料，用中火焖熟，下老抽调色加葱花、鱼末等便成。

虾皮最好在锅里面干炒（锅里面不加油，小火慢炒）一下，这样会更加香，榨菜切成末，葱也切成葱花，然后将这些材料都倒进肉糜里面。

Women who ate soy regularly as children have a lower risk of breast cancer, American researchers report. And men who eat fish several times a week have a lower risk of colon cancer, a second team of researchers have told the American Association for Cancer Research.

The studies add to a growing body of evidence about the role of diet in cancer. Cancer experts now believe that up to two-thirds of all cancers come from lifestyle factors such as smoking, diet and lack of exercise.

The US National Cancer Institute and researchers at the University of Hawaii found that women who ate the most soy-based foods, such as tofu and miso, when aged 5 to 11, reduced their risk of developing breast cancer by 58 per cent. It was not clear how soy might prevent cancer, though compounds in soy called isoflavones have estrogen-like effects.

A second study showed that men who ate fish at least five times a week had a 40 per cent lower risk of developing colorectal cancer compared with men who ate fish less than once a week.

Many kinds of fish are rich in omega-3 fatty acids, which interfere with the cyclooxygenase-2 or COX-2 enzyme. COX-2 affects inflammation, which may play a role in tumour growth.

Youth

Years wrinkle the skin, but to give up enthusiasm wrinkles the soul. Worry, fear, self –distrust bows the heart and turns the spirit back to dust.

Whether 60 of 16, there is in every human being ?s heart the lure of wonders, the unfailing childlike appetite of what?s next and the joy of the game of living . In the center of your heart and my heart there?s a wireless station: so long as it receives messages of beauty, hope ,cheer, courage and power from men and from the infinite, so long as you are young .

When the aerials are down, and your spirit is covered with snows of cynicism and the ice of pessimism, then you are grown old ,even at 20 , but as long as your aerials are up ,to catch waves of optimism , there is hope you may die young at 80.
